Warming gluten free banana bread!

Ingredients

  • 2 Bananas

  • Ground almonds (180 grams)

  • Gluten free oats (1 cup)

  • 1 Egg

  • Cashew milk (1 cup) – any other nut milk works fine too!

  • Coconut oil (2 tbsp)

  • Cinnamon (1 tsp)

  • Xanthan gum (1 tsp)

Directions

  • Preheat the oven to 180 C

  • Mash the bananas and whisk the egg

  • Melt the coconut oil in a bowl in the oven or over a pan of boiling water

  • Add all ingredients to the bowl

  • Place the mixture into a loaf pan

  • Over for around 50 mins – 1hr

Enjoy with a cup of tea or turmeric latte !!!  : )
